The Tar-Tip, as we call it, is a true masterpiece of marinating perfection. The signature hand selected cut of sirloin, dry rubbed with a medley of spices resulting in a tender, juicy slice of beef with a light hickory smoke flavor to bring out the natural flavors of the beef.  The purpose of this marinade is to seal in the natural juices and flavor.

While you can cook this on the grill, we recommend that this be place in a 375 degree oven on a cooking sheet for 40 – 45 minutes.  This will yield perfect medium rare to medium roast. When cooking this cut, you will notice that the Tri-Tip will actually swell up as the juices start to accumulate, make sure not to use anything that would puncture the roast when you get it out of the oven.

Let it rest for 10 minutes before cutting into this boldly flavored meal.

Pair this with a nice full bodied red wine, a mild green vegetable and roasted red potatoes.
